All-Time Favorite Sheet Cakes & Slab Pies: Easy to Make, Easy to Serve
Here is an unusual book for bakers, though with limitations. All-Time Favorite Sheet Cakes & Slab Pies by Bruce Weinstein and Mark Scarborough gives home cooks a large selection of recipes for two kinds of baking goodies: cakes and pies. But everything is baked in a large pan, what bakers call a half sheet. Sounds simple and useful if you give or attend large parties as each baked product provides sixteen to twenty-four servings, far too much for everyday home baking. Besides, these pans may not fit if you have a small apartment oven. The authors strongly recommend sticking with these pans that you may have to purchase. They spend the first chapter on equipment, basics, and ingredients and give good suggestions. An omission is not illustrating the equipment they talk about (e.g. offset spatula). The recipes are good and varied, and the ingredients easily available and a Tester. The notes are useful. Perhaps the most serious problem is recipe layouts. The book designer disregarded bakers’ convenience. Many of the recipes run from a page to overleaf pages, and as you prepare a recipe you are unhappily leafing back and forth. The illustrations and index are good.
