Back to the Cutting Board is a beautiful cookbook that embodies that lifestyle and shares Pirello’s ideas and philosophy. Chapter one outlines what tools and foods the reader will need in his or her kitchen to take on this new lifestyle as well as some essential food preparation methods. Chapter two discusses meals and the Five Transformations of Energy. Chapters three through seven are packed with recipes for Veggies, Soups, Whole Grains, Essential Plant Proteins, and Killer Desserts. This is a gorgeous, completely vegetable-based cookbook, so for recipes like Carrots Osso Buco, Pirello has your vegan back. It may seem like the meat is missing, but it’s not needed and won’t be missed. Some of the nutritional claims she makes aren’t supported by science—at least not yet—but overall Pirello’s book promotes a healthy, delicious lifestyle.
