Field Roast: 101 Artisan Vegan Meat Recipes to Cook, Share, and Savor
If you are a vegan and a dedicated and very good cook with plenty of kitchen time on hand, Field Roast by Tommy McDonald will be a good choice for you. This is a beautiful cookbook, but most recipes are very time consuming to prepare. One of the two basic foundations is the major ingredient in many recipes: one of the field roasts or one of the vegan sausages (or vegan meatloaf), all of which require time, skill, and patience to prepare. Many of the recipes are difficult enough for a home cook to be considered items in a high-end vegan restaurant. The recipes are well written, easy to follow, and the ingredients are mostly available in markets specializing in vegan supplies though you will still have to search for items like sugar pie pumpkin or kuri squash or dinosaur kale, to name a few. The recipe layout is good, mostly designed to keep instructions and ingredients on a single page. The head notes are nice, and the many Chef’s Notes are useful as well as sidebars. Expect recipes like Khao Soi and Hom Bao. The photo illustrations are stunningly beautiful, and the step-by-step photo series are excellent. So is the extensive index.
